Recipe-Whole Wheat Bread


This Is Definitely My Favorite Whole Wheat Bread Recipe.

It’s actually a combination of grains. . .whole wheat, oats, and rye. It always turns out chewy, never dry and crumbly. And it never fails to get compliments! All you have to do is put all the ingredients into your bread maker in the order listed, set it for the appropriate setting for your machine, and you’ll have a wonderful, plump loaf of bread in 3 1/2 to 4 hours, depending on your individual bread machine.

Delicious Whole Wheat Bread

  • 1 1/4 cups water
  • 1/8 cup olive oil
  • 1/8 cup honey
  • 1 1/4 tsp. salt
  • 2 cups whole wheat flour
  • 1/2 cup plus 1/8 cup regular oats
  • 1/2 cup plus 1/8 cup rye chops
  • 1/2 cup instant vital wheat gluten flour
  • 1 1 /4 tsp. yeast


Instant Vital Wheat Gluten Flour

Also called “gluten flour”, “instant gluten flour”, “pure gluten flour”, and “vital wheat gluten” depending on vendor and manufacturer. This is flour with the starch and bran removed. Gluten is the natural protein in the wheat endosperm which, when combined with water, forms a taffy-like dough. This retains the gas and steam from baking.

While vital wheat gluten flour contains 75% or greater protein, the flours labeled Bread Machine Flour and High Gluten Flour have between 12 and 14% protein. So make sure you are using the Instant Vital Wheat Gluten Flour to get the best results.

Rye chops are coarsely-ground rye kernels. Vital Wheat Gluten Flour and Rye Chops are usually available in the health food section or baking section of your grocery, or at many health food stores. You can always look online if you can’t find them locally. If you don’t have rye chops, you can substitute rye flour, or use 2 1/2 cups whole wheat flour instead of 2 cups.

    This sounds like a hearty one. I like everything in it, though I’ve never used olive oil in bread before. I’m guessing it goes well with the rye flavor and both are curbed a bit by the honey.

    This looks like a great recipe. It’s hard to find hearty bread from grocery stores. Everything has unnecessary sugar in it. BTW, can I use a regular oven if I don’t have a bread maker? Thanks.

    Sounds fantastic this recipe and I will definitely try it out with my bread maker. I also like to bake a lot so if I am making large quantities of bread I will use my stand mixer to mix up the bread dough and then seperate it in portions to bake.

    If I am only baking the one loaf for the family I will usually just use my bread maker.
